Anyone who has tried to make waffles while eating clean knows they can easily be a flop (literally).
Not to mention having to use a spray oil for the waffle iron.
Well guess what?
Here’s a fool proof recipe with a nontoxic no-spray-needed waffle iron!
The Key: The Waffle Iron
Some people swear up and down by their waffle maker, and if that’s you, fabulous! However, with my family being so sensitive to nonstick coatings and spray oils, I’ve had to search far and wide to find a good, quality, nontoxic waffle iron that doesn’t require oil. (Besides their liver-burdening high fat content, here’s one reason we avoid almost all cooking oils.) And finally, I found it with the Presto. Nontoxic, easy to use, and easy to remove waffles are all things I love about this waffle maker. We love it!
Note: Presto is not sponsoring this post or my praise in any way; I just really love this waffle maker! However, if you do click through and make a purchase, I will earn a small commission at no additional cost to you.
Fluffy Vegan Waffles
These super nutritious, super delicious, and easy to make waffles will win your morning no matter what! You can play around with the ingredients – sometimes we add a dash of cinnamon, mix in some strawberries or wild blueberries, or even switch out the flour for buckwheat flour. Get creative and enjoy!
Ingredients:
- 1 Tbsp, plus 2 teaspoons lemon juice
- 1 tsp, plus 1/2 tsp baking soda
- 1 1/2 cups vegan milk (we used sesame milk)
- 2 cups gluten free flour (we use oat flour or ground millet flour – 240g)
- 1/2 teaspoon Himalayan salt or dulse granules
- 1 tablespoon maple syrup
- 1/4 cup melted coconut oil or melted vegan butter (we like Miyoko’s vegan butter)
- 1/2 teaspoon vanilla extract (or 6-7 drops of high quality vanilla essential oil)
Instructions:
- Combine 1 Tbsp lemon juice and 1 tsp baking soda in a small bowl and let sit for 5 minutes.
- Mix the above mixture, nut milk, vanilla extract, and the lemon juice together in a small bowl/measuring cup. Set aside for about 5 minutes. This will make the vegan buttermilk.
- In a large bowl, sift the flour, 1/2 tsp baking soda, and salt. The sifting really helps to make the waffles fluffy.
- Add the maple syrup, melted butter/oil, and buttermilk mixture into the dry ingredients. Using a spatula, gently mix the batter until JUST combined. The batter should be thick and scoopable.
- Turn on and preheat your waffle maker. If your waffle maker has low, medium, and high settings, choose medium. I like mine crisp and golden but also very fluffy. With the waffle maker I use, I plug it in and give it 5 minutes to warm up.
- Using a 1 cup measuring cup, get a heaping scoop of the batter and pour into the middle of the waffle maker. You don’t need to push it to the edges. Close and set the timer for 4 min. At the 2 minutes mark, I flip the waffle maker and let it cook for the remaining 2 minutes.
- Gently remove the waffle, heap with your favorite toppings, and enjoy!
