Course Breakfast

Ingredients

  • 1 tbsp lemon juice
  • 1 tsp baking soda
  • 1 1/2 cups vegan milk we used sesame milk
  • 2 teaspoons lemon juice
  • 2 cups gluten free flour we use oat flour or ground millet flour - 240g
  • ½ tsp baking powder
  • 1/2 teaspoon Himalayan salt or dulse granules
  • 1 tablespoon maple syrup
  • 1/4 cup melted coconut oil or melted vegan butter we like Miyoko’s vegan butter
  • 1/2 teaspoon vanilla extract or 6-7 drops of high quality vanilla essential oil

Instructions

  1. Combine the 1tbsp lemon juice and 1 tsp baking soda in a small bowl and let sit for 5 minutes.
  2. Mix the above mixture, nut milk, vanilla extract, and the lemon juice together in a small bowl/measuring cup. Set aside for about 5 minutes. This will make the vegan buttermilk.
  3. In a large bowl, sift the flour, baking powder and salt. The sifting really helps to make the waffles fluffy.
  4. Add the sugar, melted butter/oil, and buttermilk mixture into the dry ingredients. Using a spatula, gently mix the batter until JUST combined. The batter should be thick and scoopable.
  5. Turn on and preheat your waffle maker. If your waffle maker has low, medium, and high settings, choose medium. I like mine crisp and golden but also very fluffy. With the waffle maker I use, I plug it in and give it 5 minutes to warm up.
  6. Using a 1 cup measuring cup, get a heaping scoop of the batter and pour into the middle of the waffle maker. You don’t need to push it to the edges. Close and set the timer for 4 min. At the 2 minutes mark, I flip the waffle maker and let it cook for the remaining 2 minutes.
  7. Gently remove the waffle, heap with your favorite toppings, and enjoy!
